
Nothing like a delicious bowl of chili to warm you up on a cold winter night. This fiber and protein packed chili is comfort food that actually nourishes you!
CHILI RECIPE
Ingredients:
• 2 lbs lean ground beef
• 2 (15.5 oz) cans kidney beans, drained & rinsed
• 1 (28 oz) can crushed tomatoes
• 1 (28 oz) can diced tomatoes
• 1 white onion, diced
• 2 green peppers, diced
• 4–6 cups beef broth (depending on desired thickness)
• Olive oil
Seasonings:
• 1 tsp chipotle powder
• ½ tsp chili powder
• ½ tsp paprika
• ½ tsp garlic
• ½ tsp cayenne
• Salt & Pepper
For seasonings I started with 1/2 tsp and then added more based on my preference – so feel free to add more to taste!
Instructions:
1. Heat olive oil in a large pot over medium heat
2. Add onion and green peppers and sauté until softened
3. Add ground beef and cook until browned, breaking it up as it cooks
4. Stir in seasonings and cook for ~30 seconds
5. Add crushed tomatoes, diced tomatoes, beef broth and a few minutes later add in the kidney beans
6. Bring to a simmer, reduce heat, and cook for 30–45 minutes, stirring occasionally
• Taste & adjust seasonings based on your personal preference
• Chili thickens as it rests. Letting it sit before serving allows the beans & meat to absorb liquid and deepen it’s flavor
