Greek Chicken Stew (Kokkinisto Chicken)

In the mood for something delicious, comforting that doesn’t take a long time to prepare? Here’s one of my favorite dishes to make, Greek Chicken Stew (Kokkinisto Chicken)

Ingredients:
1. 1 lb. Chicken (I use the Bell Evans Chicken Breast Tenders for this recipe)
2. 1/4 tsp Salt
3. 1/4 tsp Pepper
4. 1/4 tsp Oregano
5. 1/2 White onion (chopped)
6. 1.5 tbsp Olive Oil
7. 1 Cinnamon Stick
8. 1/4-1/2 cup Tomato sauce (I use Mutti Tomato Sauce for this recipe)

Directions:
1. Heat olive oil in pan and sauté onion for ~1-2 minutes
2. Season chicken with salt and pepper and add to skillet and cook for about ~3-4 minutes each side
3. Add 1/4 cup Mutti Sauce and 2 cups of water (feel free to add more sauce, if needed) + 1 cinnamon stick
4. Cook for ~25-30 minutes (if you see stew starts to thicken before then, add more water)
5. Enjoy with veggies and a serving of whole grain to make the meal a balance of lean protein, high fiber carb, veggies and healthy fat!
