Get ready for Super Bowl Sunday this weekend with these delicious protein & fiber packed Buffalo Chicken Meatballs 🏈🍽️

BUFFALO CHICKEN MEATBALL INGREDIENTS:
1. 1 lb. lean Ground Chicken
2. ½ cup Organic Fine Wheat Bran mixed with Italian Seasoning
3. ¼ cup finely chopped cilantro (save some for garnish)
4. 1 large carrot, shredded
5. 2 tablespoons green onion, diced
6. 1-2 cloves garlic, minced
7. 3 tablespoons buffalo sauce (4 tbsp if you like things extra spicy🌶️)
8. 1 egg 🥚
9. 1/4 tsp salt
10. 1/4 tsp pepper
11. 1/3 cup buffalo sauce (to toss meatballs in after baking)

GREEK YOGURT DIP INGREDIENTS:
1. 1/2 cup 0% Greek Yogurt
2. 1/2 lemon, juiced
3. 1/4 tsp garlic powder
4. 2-4 tbsp water
5. Salt & Pepper to taste

Directions for Greek Yogurt Dip:
1. Whisk all ingredients together and store in fridge until meatballs are ready

Directions for Meatballs:
1. Pre-heat oven to 400
2. Line baking sheet with parchment paper
3. Combine all ingredients together
4. Form into small meatballs and place on baking sheet
5. Bake until cooked through, about ~15-17 min or until internal temp is 165
6. Place cooked meatballs in bowl & toss with additional buffalo sauce
7. Plate & drizzle with Greek yogurt dip & a sprinkle cilantro for garnish
8. Enjoy!

For the record this recipe can be an easy and delicious lunch or dinner any day of the week. It doesn’t have to only be on Super Bowl Sunday!
