
Lately I’ve been loving simple weeknight meals that still feel a little special and so this Honey Lemon Salmon has been on repeat. It’s fresh, flavorful, and perfectly balanced with protein + healthy fats + bright herbs!
Honey Lemon Salmon
Ingredients:
• 1 lb. wild-caught salmon
• 3 tbsp olive oil
• 2 tbsp Dijon mustard
• 3 tbsp honey
• 1 clove garlic, minced
• 3 tbsp fresh dill, chopped
• Juice of 1-2 lemons
• Salt & pepper (to season salmon)l
(feel free to adjust measurements based on personal preference!)
Directions:
1. Preheat oven to 400
2. Season salmon with salt & pepper
3. On the side, whisk together olive oil, dijon mustard, honey, garlic, dill and lemon juice
4. Pour & spread evenly over salmon and bake for ~18 minutes, or until tender and golden
5. Enjoy!
I love serving this with roasted veggies and potatoes for a nourishing, balanced ygeia inspired meal!
